Yellow cheese is a type of hard cheese that has undergone a cedarization process. It is produced only from sheep or cow milk and from a mixture of sheep and skimmed cow milk. The yellow cheese is a dairy product produced mainly on the Balkan Peninsula. The production of the yellow cheese as we know it today has been achieved through the gradual improvement of technology over many centuries. It consists in the souring of the cheese and subsequent scalding with hot water and salting.
Ralitsa MILK cheese is marketed in four types – cow milk, sheep milk and goat milk cheese. It is known for its qualities both in Bulgaria and abroad.
Ralitsa MILK cow milk is 2%, 3.6% and 8% fat, and along with ayran and sour cream is available in environmentally friendly packaging.
